COOK WITH ME | YOUVARLAKIA AVGOLEMONO [Greek meatball soup]

Welcome back to the blog guys!!
I recently posted a "COOK WITH ME" vlog on the YouTube Channel and wanted to give you guys the recipe. This meal is D-E-L-I-C-I-O-U-S!!!

Ingredients
For the meatballs:
1 pound ground beef
1 large egg
2 tablespoons olive oil
1/3 cup basmati rice
1 onion, finely chopped
2 cloves garlic, minced
2 tablespoons finely chopped fresh parsley
1 teaspoon salt
freshly ground pepper
For the soup:
6 cups water or chicken stock
1 teaspoon salt
For the emulsion:
4 egg yolks
1/2 cup lemon juice, juice of 2 lemons (approx.)
1 tablespoon cornstarch
1/4 teaspoon dried/or fresh dill
3 tablespoons olive oil
STEPS:
1 - Add all ingredients for the meatballs in bowl, mix, make meatballs
2 - Cover or don't cover & Refrigerate for 15 minutes
3 - Bring water/chicken stock to a boil with 1 tea spoon of salt
4 - Put meatballs in water and let simmer for 30 mins
5 - Remove meatballs
6 - Add 1 cup of water to soup
7 - Combine emulsion ingredients in a bowl and whisk egg + ingredients until frothy
8 - Add 2 scoops of chicken broth (1 at a time) while whisking. Do not stop whisking as this keeps the egg from cooking and makes your soup creamy !!
9 - Add mixture back to soup
10 - Taste for seasoning (salt + pepper)
11 - Add meatballs back to soup and let simmer 5 minutes
Serve with bread, ENJOY XOX
